the cuts simply refer to the season in which they were cut. However, the crude protein, fat and fiber vary from cut to cut. First cut hay harvested early in the season (first hay out of the field for that year) is a thinner hay that is cut before hay has blossomed. This hay usually has a higher fiber content, and a lower protein and fat content. This hay is suitable for most small animals unless they are underweight. Second cut there will be more leaves on the stems, the stems will be thinner, the protein and fat levels are a bit higher, and crude fiber is a bit lower. This hay smells wonderful :). Third cut hay is very soft and leafy lots of blossoms(alfalfa). It is a very rich hay with high contents of fat and protein and lower in fiber. This hay is used more as a treat or mixed in to hay to encourage eating. This hi fat hay is also used for under weight adults or growing babies.
